Mama’s Monday Night Turkey Chili Soup

Isaac really really really wanted to help me cook one night, so a few of these ingredients were not in my original plan.  It turned out great, and we’ve continued to play with the basic recipe until we came up with this.  Personally, we really like the beans, but some relatives are “no bean” people.  It works just fine to leave them out.  The carrots and peas added some much needed color and a touch of sweetness.  Use this a platform, and launch from here.  Play with it.  Enjoy it.

Mama’s Monday Night Turkey Chili Soup

Ingredients:

1 16oz Pkg Jenny O’ Ground Turkey (brown & save grease for onion)

1 onion – chopped or minced – your choice

3 cloves minced garlic – I used jarred minced garlic

32 ounces (one box) Kirkland Organic chicken stock

1 cup brown rice

1 tsp parsley

½ tsp salt

½ tsp pepper

½ tsp cayenne pepper

½ tsp mama’s fish rub (see below)

Optional:

1 can of beans not drained – your choice of beans but garbanzo is NOT good

1 can black beans not drained

Carrots – amount is up to you

Petite peas – amount is up to you

 

Mama’s Fish Rub:

Mix all ingredients.  Easy to make bigger batches by multiplying the ingredients.  Seems to save well.

1 tsp granulated garlic

½ tsp salt

½ tsp oregano

½ tsp cumin

½ tsp curry powder

 

Directions:

Brown the ground turkey saving the grease for the onions.

Sauté the onions in the grease.

Throw everything except the peas into the crockpot and cook on low heat as long as you want.  The longer you cook it, the thicker it gets.  Should it happen to get too thick just add a bit of water.

Microwave or steam the peas and stir in at the last minute.

Serve
